Ingredients & seasonings: 4 mackerel fish 2 tablespoons of tamarind juice 1 onion, sliced 2 cm galangal, shredded 2 orange leaves 1 tomato, sliced 100 ml of water 8 large red chillies, puree 7 shallots, puree ½ teaspoon salt ½ tsp Sasa T tsp pepper ½ teaspoon of sugar 2 vegetable / lime star fruit Oil for frying fish & sautéing spices HOW TO MAKE BALADO KUNGUNG FISH: Clean the innards of mackerel & remove the gills, wash it cleanly wuluh starfruit / lime juice. Let stand 10 minutes fry in hot oil ripe, lift & drain from oil. Heat oil, saute red chili & finely onion with galangal & fragrant orange leaves add tomatoes & onions. Add water, tamarind water, add salt, pepper, sugar & Sasa  Mix well & continue cooking boiling & seasoning thickens. Add the fish, stir well to turn off the heat. Lift and serve in a serving dish.
